At Eleven14, we take pride in our El Salvador coffee, a product of generations of expertise and sustainable farming. Sourced from the San Ernesto farm, run by sixth-generation brothers Enrique, Rene, and Gustavo, this coffee is rooted in tradition and innovation.

Sustainability at Its Core

Our El Salvador coffee is 100% shade-grown, ensuring that it is cultivated in harmony with the environment. Native trees are planted each year to combat soil erosion, promoting biodiversity and preserving the natural habitat. This practice creates a healthier ecosystem for the coffee plants, enhancing the quality of the beans. Coffee grown under shade tends to develop more slowly, allowing the beans to retain complex flavours that can be lost in direct sunlight. In addition, shade-growing helps with temperature regulation, protecting the plants from extreme heat while maintaining a stable growing environment.

Grown at High Altitudes

The elevation at which coffee is grown plays a significant role in its flavor profile. Our El Salvador coffee is cultivated between 1,000-1,200 meters above sea level, which is considered an ideal altitude for producing high-quality beans. Coffee grown at higher elevations tends to have more acidity and vibrant flavours, as the cooler temperatures slow down the ripening process. This slower development allows the beans to mature fully, resulting in a rich and nuanced cup.

The Varietals: Bourbon and Pacas

Our El Salvador beans come from two distinctive varietals: Bourbon and Pacas. Bourbon, known for its sweetness and complexity, contributes to the coffee’s balanced profile, while Pacas, a natural mutation of Bourbon, enhances the body and adds a layer of smoothness. Together, these varietals create a unique blend that showcases the best of El Salvador’s coffee-growing tradition.
